Entre Nous, L’Entre Deux Mers
The cultivation of these grape varieties on the Château Chillac and Quillet estate is very old. Today, with a mastery of maturity and a choice of the collection of clusters at the optimum, we benefit from all the characteristics of the sauvignon blanc and the sauvignon gris, whether in terms of aroma on the nose and in the mouth or by colour. Sauvignon gris is not a grape seen very often and is actually a pink grape which contributes more aromatics and a richer rounder feel than it’s parent, sauvignon blanc.
Tasting: Aromatic white flowers, citrus fruits, dry and mineral and great acidity
Pairings: Seafood, goat cheeses, Loire/Touraine cheese, spicy food
